Weekend Bake: Lemon Butter Cookies


Attempted to make some lemon thins but it didn't turn out quite as thin so it's more like butter cookies which is unfortunate because i loooove lemon thins. Anyway, these turns out not too bad but the lemon flavour was almost non-existent so I'd suggest adding more than just 2 teaspoons of lemon zest, 2 more teaspoons of lemon juice maybe! The recipe adapted from here.

You'll need:
2 cups all-purpose flour
2 teaspoons baking powder
2 sticks unsalted butter
½ cup confectioners’ sugar
½ cup granulated sugar
2 tablespoons grated lemon zest
1 teaspoon salt
4 egg yolks

How to:
1. Combine flour and baking powder together in a small bowl and combine.
2. Beat the butter in a mixer until pale and creamy. Add confectioner’s sugar and beat for one minute. Add regular sugar and beat for another minute. Add lemon zest and salt, mix until just combined.
3. Drop in egg yolks one at time. Mix each for just a few moments until combined.
4. While the mixer is on low speed add the flour mixture slowly until just combined.
(So being a not-so-fantastic baker, the above steps took me SO long and I was completely drained. My sister kindly took over the cookie cutting and popping it into the oven.)
5. To bake the cookies, preheat oven to 180C.
6. Flatten out dough and use a cookie cutter if you like.
8. Bake for about 13 - 14 minutes, or until edges turn golden.
